Yesterday we decided to give spinach a new chance in our lifes. This great, iron and vitamin c giving plant is kinda missing in our everyday diet, although, cooked right, it's deliciouse. So we used it in two really easy recipes. The first one was "cheese/spinach bruschetta" the second "spinach quiche". so here we go...
Cheese/Spinach Bruschettaingredients:4 ciabatta breads
200g cheese (we used feta)
1 onion
4 pieces of garlic
butter
2 tomatos
salt and pepper
450 g spinach
preperation:
it's actually a very simplified bruschetta recipe. u cut the breads in halfs, butter them, cut the garlic and the tomatos into pieces and put them aswell on the breads. cook the spinach in 50 ml hot water. after it's cooked put it on the breads and top them with slices of cheese. then u bake everything in the preheated oven (ca. 180°C) for about 10 minutes.

dough:
250 g flour
1 tsp backing powder
1 egg
150 g butter
tsp salt
filling:
450g spinach
1 onion
4 pieces of garlic
2 tomatos
125g cream
10g butter
salt and pepper
topping:
1 egg
125 cream
muscat, salt, pepper and sweet paprika
100 g cheese (we used feta)
preperation:
mix backing powder with flour. add butter, salt and egg and mix it properly. then put the dough in a backingform. make the edge 1 centimeter high. then bake it for 20 minutes. fry garlic and onion in a pan, add the cooked spinachm, chopped tomatoes, butter and cream and spice it with salt and pepper. then put the mixture on the dough. mix the egg with cream, spices and the cheese and pour over the filling. bake for 25 minutes (180°C). ...bon appetit!
